Baked Chicken Alfredo Lasagna Rollups

9-12 lasagna noodles

2 cups cooked chicken, shredded (rotisserie chicken works well)

2 cups ricotta cheese

1 ½ cups grated mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 cup spinach, fresh or frozen (thawed and squeezed dry, if frozen)

3 cups Alfredo sauce (store-bought or homemade)

Fresh parsley, for garnish

Salt and pepper, to taste

Instructions
 

Preheat Your Oven: Preheat the oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay them flat on parchment paper to prevent sticking.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1 cup of mozzarella, ½ cup of Parmesan, garlic powder, onion powder, Italian seasoning, spinach, salt, and pepper. Mix until well combined.

        Assemble the Rollups: Spread a spoonful of Alfredo sauce over each lasagna noodle, covering the entire surface. Place a generous amount of the chicken and cheese mixture on the wider end of the noodle. Carefully roll up the noodle, starting from the wide end, and secure with a toothpick if necessary. Repeat until all noodles are filled.

          Arrange in Baking Dish: Spread a thin layer of Alfredo sauce on the bottom of a 9x13-inch baking dish. Place the rollups seam-side down in the dish. Once all rollups are in place, pour the remaining Alfredo sauce over the top and sprinkle with the remaining mozzarella and Parmesan cheese.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
