8 rice paper wrappers

1 ripe avocado, sliced

1 large mango, peeled and sliced into thin strips

1 cup cucumber, julienned

1 cup carrots, julienned

1/2 cup red bell pepper, thinly sliced

1/4 cup fresh mint leaves

1/4 cup fresh cilantro leaves

1 cup cooked vermicelli rice noodles (optional)

Soy sauce or peanut sauce for dipping

Prepare the Ingredients: Start by washing and slicing the avocado, mango, cucumber, carrots, and red bell pepper. If using vermicelli noodles, cook them as per the package instructions, rinse with cold water, and set aside.

    Soak the Rice Paper: Fill a large shallow dish with warm water. Submerge one rice paper wrapper in the water for about 10-15 seconds, or until it becomes soft and pliable. Remove it gently and place it on a clean cutting board.

      Layer the Fillings: In the lower third of the rice paper, start layering the fillings: a few slices of avocado and mango, a small handful of cucumber, carrots, and bell pepper, a few mint and cilantro leaves, and if you're using them, a small portion of the vermicelli noodles.

        Roll the Summer Roll: Carefully fold the sides of the rice paper over the filling. Starting from the bottom, roll the wrapper up tightly around the fillings, tucking in the sides as you go to ensure a snug roll. Repeat the process with the remaining ingredients.
