2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

8 small corn tortillas

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Crumbled feta cheese (optional)

Sour cream or Greek yogurt (optional)

Prepare the Chicken: In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Rub this spice mixture all over the chicken breasts.

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Once hot, add the seasoned chicken. Cook for about 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes.

      Make the Avocado Salsa: While the chicken is resting, combine diced avocado, cherry tomatoes, red onion, cilantro, and lime juice in a bowl. Gently toss to combine and season with a pinch of salt and pepper.

        Slice the Chicken: After resting, slice the cooked chicken into thin strips.

          Warm the Tortillas: In a dry skillet, warm the corn tortillas one at a time for about 30 seconds on each side or until pliable.

            Assemble the Tacos: Place a few slices of chicken in the center of each tortilla, followed by a generous scoop of avocado salsa. If desired, sprinkle crumbled feta cheese and add a dollop of sour cream or Greek yogurt on top.
