Apple Cinnamon Coffee Cake

For the Cake:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

¾ cup sour cream

1 large apple (Granny Smith or Honeycrisp), peeled and diced

For the Cinnamon Streusel Topping:

½ cup all-purpose flour

½ cup brown sugar, packed

1 tsp ground cinnamon

¼ cup unsalted butter, melted

½ cup chopped walnuts or pecans (optional)

For the Glaze (Optional):

1 cup powdered sugar

2-3 tbsp milk

½ tsp vanilla extract

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.

    Prepare Dry Ingredients: In a medium bowl, whisk together 1 ½ cups of flour, baking powder, baking soda, salt, and 1 tsp cinnamon. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract. Mix well until combined.

          Incorporate Dry Mixture: Gradually add the dry flour mixture to the butter mixture, alternating with the sour cream. Start and end with the flour mixture, mixing until just combined.

            Fold in Apples: Gently fold the diced apple into the batter until evenly distributed.

              Make Streusel Topping: In a small bowl, mix the flour, brown sugar, and cinnamon. Pour in the melted butter and stir until crumbly. If using, fold in the chopped nuts.

                Layer the Batter: Pour half of the cake batter into the prepared pan. Sprinkle half of the cinnamon streusel on top. Layer the remaining batter over the streusel, then top with the remaining streusel.

                  Bake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

                    Cool the Cake: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                      Prepare the Glaze: (Optional) Mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
