1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 pound shrimp, peeled and deveined

4 cloves garlic, minced

1 medium lemon (zest and juice)

3 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and has absorbed the liquid. Remove from heat and set aside.

    Prepare the Shrimp: While the quinoa cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.

      Season the Shrimp: Add the shrimp to the skillet. Season with paprika, red pepper flakes, salt, and pepper. Sauté the shrimp for 2-3 minutes until they turn pink and are cooked through.

        Add Lemon Flavor: Once the shrimp are cooked, pour in the lemon juice and sprinkle in the lemon zest. Stir well to coat the shrimp in the zesty mixture.
