12 oz (340g) pasta (farfalle or penne work well)

2 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 tsp sugar (to balance acidity)

Salt and pepper, to taste

1/2 cup freshly grated Parmesan cheese

1 cup fresh basil leaves, chopped

Extra basil leaves for garnish

Crushed red pepper flakes (optional, for a kick)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes: Pour in the can of diced tomatoes (with juices) and stir. Allow to simmer for about 3-4 minutes, letting the flavors meld.
