30-Minute Chicken Alfredo Spinach Pasta

12 oz fettuccine pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, diced

3 cloves garlic, minced

5 oz fresh spinach (about 6 cups)

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: extra Parmesan for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-7 minutes or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Garlic and Spinach: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.

        Make the Alfredo Sauce: Lower the heat to medium-low. Pour in the heavy cream and stir to combine with the garlic and spinach. Allow to heat through for about 2 minutes. Gradually whisk in the Parmesan cheese until melted and smooth. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

          Combine: Add the cooked chicken back into the skillet along with the Italian seasoning. Mix well to combine. Add the drained fettuccine and toss everything together until the pasta is evenly coated with the creamy sauce.

            Taste and Adjust: Check the seasoning and adjust with more salt or pepper if needed.

              Serve: Divide the creamy chicken Alfredo spinach pasta into bowls. Garnish with chopped fresh parsley and additional Parmesan cheese if desired.
