30-Minute Beef Stroganoff with Egg Noodles

1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced

1 cup beef broth

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Cook the Egg Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the thinly sliced beef. Season with salt and pepper. Sear for about 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion for 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for another 4-5 minutes until the mushrooms are tender.

        Add Liquid Ingredients: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, scraping the bottom of the skillet to incorporate any browned bits.

          Combine Beef and Sour Cream: Return the beef to the skillet and reduce the heat to low. Stir in the sour cream until well combined and warmed through. Allow to simmer for 2-3 minutes to heat the beef completely and let the flavors meld together. Adjust seasoning with salt and pepper, if necessary.

            Toss with Noodles: Add the drained egg noodles to the beef stroganoff mixture and gently toss to combine, ensuring the noodles are evenly coated in the creamy sauce.
