1 lb boneless, skinless chicken breasts

2 medium sweet potatoes, peeled and cut into thin strips

1 cup BBQ sauce (your favorite variety)

4 large tortillas (flour or whole wheat)

1 cup coleslaw mix (cabbage, carrots, etc.)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Prep the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the sweet potato strips in a bowl with olive oil, smoked paprika, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast for about 20 minutes or until tender and slightly crispy, flipping halfway through.

    Cook the Chicken: While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. Heat a grill pan or skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes per side or until fully cooked (internal temperature should reach 165°F/75°C).

      Add BBQ Sauce: Once the chicken is cooked, brush it generously with BBQ sauce on both sides and cook for an additional 2-3 minutes to caramelize the sauce.
